 which took place in June for restaurants, mobile establishments and bars in Peoria County. More than 80 routine inspections − including risk factor inspections − were completed for these categories.

The establishments listed below received either no violations or enough violations to warrant a warning from the health department. According to the Peoria City/County Health Department, “inspections only provide a snapshot of a food establishment’s practices, as they are based on what is seen at the time of the inspection.”

Terminology used by the health department

Core violation: These violations relate to “general sanitation, operational controls, sanitation standard operating procedures (SSOPs), facilities or structures, equipment design, or general maintenance,” according to the health department.

Priority foundation violation: These violations could lead to priority violations if they are not corrected.

Priority violation: These violations are considered the most high-risk by the health department, as they have the potential to directly contribute to foodborne illness.

Violations for Peoria Heights restaurant

Salt doing business as Cayenne at 4542 N. Prospect Road, Peoria Heights, received five priority, five priority foundation and six core violations during a routine inspection. These included:

The “Ice machine baffle is not clean to sight and touch and appears to be growing pink mold,” according to the health department.

The health department found a lemon “covered with mold” in the basement’s walk-in fridge. The violation was corrected on site.

The health department found “foods that do not have a date in which the product was made, and there are multiple foods that are past the 7 day limit.” The violation was corrected on site.

An employee changed “gloves without washing hands to work with ready to eat foods” after touching raw fish. The violation was corrected on site.

The water was shut off at a handwashing sink by one of the prep areas, and “there was no drainage plumbing at the sink.” According to the health department, “At least 1 handwashing sink necessary for convenient use by food employees shall be provided in all food prep locations.”
